Nez : Crème de fruits rouges, doux, onctueux, vanillé. Crème brûlée définitivement. Confit d'orange, fruits exotiques. Il brille par sa lisibilité, sa saine complexité. Chocolat au lait, café, raisins secs, clairement inspirés de sa maturation en fûts de sherry Matusalem dont je recommande vivement la version 30 ans en dégustation.

Bouche : La bouche reste douce, tout en proposant plus de bois, plus d'épices. Son côté crémeux ne l'abandonne pas pour autant, il est accompagné du style profond de The Dalmore, c'est à dire marmelade d'orange et chocolat. Notes de café serré, amandes grillées. Au fil de la dégustation elle n'a de cesse d'évoluer, laissant de plus en plus le sherry s'exprimer, un rancio qui va se préciser encore vers la finale.

Finale : Raisonnablement sèche et boisée. Nous sommes pleinement dans ce café puissant, des notes de prunes cuites, de raisins secs, de noix. Quel beau travail. 

Souvenir, vestige, mélancolie de cette soirée déjà lointaine, ce whisky âgé de 35 ans va disparaître à jamais en moi.

En effet ce magnifique The Dalmore, de sa carafe Baccarat estimé à plus de 4000 euros sera probablement le dernier que je pourrai me servir et pourtant ce n'est pas l'envie qui manque, car je crois que c'est un whisky qu'il faut goûter et goûter encore afin de capter sa quintessence.

Nose: Cream of red fruit, sweet, creamy, vanilla. Crème brûlée definitely. Confit of orange, exotic fruits. It shines through its legibility, its healthy complexity. Chocolate with milk, coffee, raisins, clearly inspired by its maturation in barrels of sherry Matusalem whose recommendation I strongly recommend the 30 years in tasting.

Palate: The palate remains soft, while offering more wood, more spices. Its creamy side does not abandon it, it is accompanied by the deep style of The Dalmore, ie marmalade of orange and chocolate. Notes of tight coffee, grilled almonds. Over the course of the tasting, it never ceases to evolve, leaving more and more the sherry to express itself, a rancio that will be further clarified towards the final.

Finale: Reasonably dry and woody. We are fully in this powerful coffee, notes of cooked plums, raisins, walnuts. What a great job.

Remembrance, vestige, melancholy of this already distant evening, this whiskey aged 35 will disappear forever in me.
